Pecan Chicken Salad

Simple, delicious, nutritious and filling.  What more could you want in a recipe?  Oh right…it’s also low-carb!

Ingredients:

-3 cups cooked chicken breasts, diced

-4 stalks of celery, chopped

-1/2 red onion, chopped

-1 cup mayonnaise

-salt & pepper to taste

Directions:

Toss the chicken, celery, onion, mayonnaise, salt and pepper together.
