Have you ever tried okra? I hadn’t until today and let me tell you, it is absolutely delicious when roasted till crisp in the oven with some oil and spices! I am so excited to have a nutritious new vegetable to add to my menu of low-carb foods!
-2 cups fresh okra
-2 tsp garlic powder
-2 tbsp grated Parmesan cheese
-salt & pepper to taste
Preheat the oven to 425F. Cut the okra in half lengthwise and lay on a foil-lined baking sheet. Drizzle the okra with oil and sprinkle with the garlic powder, Parmesan cheese, salt and pepper. Roast about 6 minutes, flip the okra over and roast another 6-7 minutes until golden brown. Serve hot.
